A nod to my Swedish roots! Sardines are finally having their moment, but this simple, high-protein toast has been a staple in my kitchen for years.

Swedish Sardines on Toast (Smörgås)

Ingredients

·1 tin of high-quality sardines in olive oil
·2 slices of dense rye or sourdough bread
·2 hard-boiled eggs, sliced into rounds (optional)
·1/2 small red onion, thinly sliced into rings
·2 tbsp capers, drained
·1/4 cup fresh dill, chopped
·2 tbsp butter or cream cheese (or try whipped cottage cheese for extra protein!)
·Fresh radishes, thinly sliced (optional)
·1/2 lemon, for squeezing
·Freshly ground black pepper

Instructions

1.Toast the Bread: Toast your rye or sourdough slices until they are golden and sturdy enough to hold the toppings.
2.Base Layer: While the bread is still warm, spread a thin layer of butter or cream cheese across each slice.
3.Layer the Protein: Place the hard-boiled egg slices over the buttered toast. Carefully remove the sardines from the tin and lay them across the eggs.
4.Add the Tang: Top the sardines with red onion rings and a scattering of capers. These provide a sharp contrast to the rich oil of the fish.
5.Fresh Finish: Garnish with radish slices and a generous amount of fresh dill.
6.Season: Add a healthy crack of freshly ground black pepper and a bright squeeze of lemon juice over everything.
7.Serve: Best enjoyed as a quick lunch or a savory breakfast with a cold glass of water or hot coffee.
