·4 cups masa harina
·1 cup lard or vegetable shortening
·2-3 cups warm chicken broth
·2 tsp baking powder, 1 tbsp salt
·2 cups red chile pork filling
·Dried corn husks soaked
1.Beat lard until fluffy. Add masa harina, broth, baking powder, salt.
2.Beat until a small ball of dough floats in water.
3.Spread masa on soaked husks. Add filling down center.
4.Fold sides over, then fold bottom up.
5.Steam standing upright in a tamale steamer 60-90 minutes.
6.Test: masa should pull away cleanly from husk.
