Day-old rice, high heat, wok hei — the breath of the wok. Eggs scrambled in separately, char siu pork, scallions, soy sauce, and oyster sauce. The heat is the technique.

Ingredients

·4 cups day-old jasmine rice
·3 eggs beaten
·1 cup char siu pork diced or any protein
·1 cup frozen peas and carrots
·4 scallions sliced
·3 tbsp soy sauce, 1 tbsp oyster sauce
·2 cloves garlic, 1 tsp sesame oil
·White pepper

Instructions

1.Heat wok until smoking. Add oil.
2.Scramble eggs, remove and set aside.
3.Add garlic and vegetables, stir-fry 1 minute.
4.Add cold rice, break up any clumps, stir-fry over highest heat.
5.Add soy sauce, oyster sauce, and white pepper.
6.Fold in eggs, pork, and scallions. Finish with sesame oil.
