·1 lb fresh snapper or sea bass cut into 1/2 inch pieces
·Juice of 8 limes and 2 lemons
·1 mango diced
·1 cucumber diced
·1/2 red onion finely sliced
·1 scotch bonnet minced
·Fresh cilantro
·1 avocado diced
·Salt
·Plantain chips to serve
1.Combine fish with citrus juice and salt. Refrigerate 20-30 minutes until opaque.
2.Drain most of the citrus liquid leaving a few tablespoons.
3.Add mango, cucumber, red onion, scotch bonnet, and cilantro.
4.Toss gently. Taste and season.
5.Add avocado just before serving.
6.Serve immediately in chilled bowls with plantain chips.
