·4 cups broccoli florets
·1 large onion diced
·3 cloves garlic
·4 tbsp butter
·4 tbsp flour
·3 cups whole milk
·2 cups chicken broth
·2 cups sharp cheddar shredded
·Salt, pepper, nutmeg
1.Sauté onion and garlic in butter until soft.
2.Whisk in flour and cook 2 minutes.
3.Add milk and broth gradually, whisking constantly.
4.Add broccoli and simmer 15-20 minutes until very tender.
5.Use an immersion blender to blend partially — leave some texture.
6.Remove from heat, stir in cheddar. Never boil after adding cheese.
