Velvet-smooth with tender broccoli and sharp cheddar that pulls as you lift the spoon. Better than Panera and made in 30 minutes. Serve in a bread bowl for full commitment.

Ingredients

·4 cups broccoli florets
·1 large onion diced
·3 cloves garlic
·4 tbsp butter
·4 tbsp flour
·3 cups whole milk
·2 cups chicken broth
·2 cups sharp cheddar shredded
·Salt, pepper, nutmeg

Instructions

1.Sauté onion and garlic in butter until soft.
2.Whisk in flour and cook 2 minutes.
3.Add milk and broth gradually, whisking constantly.
4.Add broccoli and simmer 15-20 minutes until very tender.
5.Use an immersion blender to blend partially — leave some texture.
6.Remove from heat, stir in cheddar. Never boil after adding cheese.
